1. If you have enough room underneath, they make flush mounted hole inserts instead of the surface mounted one you have.

2. If you're willing to make more changes, you could go with a vertical mount that attaches to a sidewall of your dinette as long as you can get some backing material placed from the back side of that wall.

3. You could add freestanding legs to your dinette table, but you will have the stow the table each time before traveling.

4. The last option I can think of would be to completely remove the table and use TV trays instead.

1.) Pretty sure there is no room underneath. I'm afraid of what I might find (or NOT find) if I cut a hole in the floor. 

2.) I'm not 100% sure what you're explaining. That would be cantilevered off the wall?  
3.) Not really viable, although superior to what I have now from the standpoint of stability. Try putting a couple of cups of hot coffee on either end of a dinette table that moves about an inch or more.  

4.) Two dogs eliminate that possibility.  

The problem with the existing set-up is two-fold. It has to be lubricated so it can pivot. Once it pivots, it no longer seats firmly in the female section and rocks quite a bit. If you seat the vertical section firmly into the female section (a tapered flange) so that is doesn't rock, it won't pivot. Piss poor design.  I was hoping to find something that had a bearing of some sort, even if just teflon, so the vertical section could fit square into the female section.  I love what some manufacturers have done with the diner style seating and elimination of the vertical post.  The engineering for that however is way beyond my area of expertise, unless of course someone makes a retro fit assembly. 

I was actually thinking of using schedule 80 PVC and using PVC flanges mounted to the table and floor rather than the crap metal sections I have now.

I like this set up, but I have a conventional "C" shaped dinette.  Not sure how I'd pull that off.  There is a big RV show in a couple of weeks in Hershey PA.  I'll see if anyone has an interesting and functional design. I hope Travel Lite is there, I can't wait to kill a few of their sales.  ;-)
